  • Sour: Stimulates digestion and sharpens the mind (e.g., citrus fruits, fermented foods).

  • Salty: Enhances taste and maintains water balance (e.g., rock salt, sea vegetables).

  • Pungent: Warms the body and clears congestion (e.g., ginger, garlic, cayenne).

  • Bitter: Detoxifying and cooling (e.g., leafy greens, turmeric).

  • Astringent: Tones tissues and absorbs excess moisture (e.g., lentils, green apples).

Mindful Eating Practices

To maximize your nutrient absorption, try to eat your largest meal at lunchtime, when the sun is highest and your Agni is naturally strongest. Always sit down to eat, avoid distracting screens, and chew your food thoroughly. By transforming your meals from a mindless chore into a conscious ritual, you heal your relationship with food and pave the way for effortless digestion.
